Rice- 3 cups (rice cooker cup for measuring)
Zucchini-3 nos(shredded with skin)
Mustard seeds-1/2 tsp
Cumin seeds-1/2 tsp
Whole red chillis-4 to 5 nos
Green chillis-4 nos
Bay leaf-4 nos
Cinnamon stick-2 nos
Black cumin seeds 1/2tbsp
Water-5 1/2 cups
First clean zucchini and shred with skin until it reaches the bottom most part of it.
Heat the oil and ghee in a heavy pan over medium heat.Add cumin seeds,mustard seeds,black cumin seeds,bay leaves,cinnamon,cardamon,cloves,red chillis,green chillis and onions fry until golden brown.
Add zucchini fry 2 mins,now add rice fry for 2 mins and add water ,salt.stir and bring to boil.
After rice comes to a boil turn the heat down to low and cover the pan.Cook rice to about 20 minutes or until the rice is tender and water has evaporated.
Serve with yogurt .
