My 2nd Blog Birthday

First of all,let me say a BIG THANKS to my husband, friends and all my readers who visited "Divya's Recipes" during this 2nd years, commented,subscribed to my posts.This blog turns 2 today mainly,due to the feedback from you all.Thank you very much.


To celebrate this special occasion i had prepared a egg less cake and for the first time i tried doing an icing over it,really enjoyed doing that cake.

Tomato Baath / Tomato Rice

Ingredients:-


Basmati Rice-4 cups
Tomatoes-4 to 5 nos ( Puree 2 to 3 cups)
Green peas-1/2 cup (u can add more)
Coconut Milk-1 can
Onions-1 Big size (sliced)
Green chillies-6 to 7 nos( slit)
Cardamom-3 nos
Cinnamon sticks-2 nos
Cloves-4 nos
Star Anise-1 no
Bay leaves-4 nos
Ginger/ Garlic Paste-2 tbsp
Red chilli powder-1 tsp
Turmeric powder-1/2 tsp
Garam masala powder-1/2 tsp
Salt to taste
Coriander leaves-few
Oil-3 tbsp
Water-1 1/2  cup

Method:-

Wash the rice and soak it for 30 minutes and then drain and keep it aside.













 Puree the tomatoes in a blander.Keep it aside.

Peel the onions and cut into slices.

Heat the oil in a cooker and add bay leaves,cloves,cinnamon,cardamoms,star anise and green chillies fry for a few seconds.







Now add the onions fry for 5 minutes and add ginger/garlic paste  fry for another 5 minutes.

Now add green peas fry for 3 to 4 minutes.Add turmeric powder stir once.

Now add the rice to the pan and fry for 5 minutes.

Now add tomato puree ,coconut milk,water ,red chilli powder,garam masala powder and salt mix well.

Now close the lid cook the rice.(Don't put the whistle)Make sure in between u need it stir well.

Garnish with coriander leaves.Serve hot with curd or raita.

Egg Kurma

This egg kurma is very yummy dish.This masala can be used for different vegetables and meat also.We can use this for potato with capsicum ,cauliflower,paneer,mutton,chicken and even to fish also.Any combinations of these tastes good.Hope all of my friends will also love this curry and will try this....

Ingredients:-


Eggs- 5 nos (boiled and peeled)
Onions-1 no large (finely chopped)
Green chillies-2 to 3 nos ( slit)
Red chilli powder-2 tsp
Turmeric powder-1/2 tsp
Curry leaves-few
Coriander leaves-few
Salt to taste
Oil-2 tbsp
Egg-1 no (break and whisk)


For Masala : Grind together

Cashew- 4 tbsp
Coconut grated-3 tbsp
Poppy Seeds / Khus Khus -3 tbsp
Cloves-3 nos
Cardamoms-3 nos
Cinnamon stick-2 nos small
Bay leaves-2 nos
Ginger-small pieces
Garlic-6 to 8 nos

Grind these in a mixer with little water to a fine paste.

Hard boil eggs...remove shell..can also make few slits without reaching the yellow with a knife .keep it aside.

Heat oil in a pan,add green chillies,curry leaves and onions and fry till they are golden brown.

Finally break a raw egg in a bowl and whisk nicely.Drop into the curry stir immediately and let it boil for 3 to 4 more mins.
