Kodi Gudu Pulusu / Boiled Eggs In Tamarind Gravy

Ingredients:-


Eggs-6 nos
Onions-2 nos (chopped finely)
Ginger-Garlic paste-1 tbsp
Green Chillies-3 -4 nos
Red Chilli powder-1 tsp
Turmeric powder-1/2 tsp
Coriander powder-3/4 tsp
Cumin powder-1/4 tsp
Tomato-1 nos (optional)
Tamarind-1 big lemon size (soaked in warm water and pulp extracted)
Sugar or Jaggery -1/2 tsp
Water-2 cups
Coriander Leaves- few chopped
Oil-2 tbsp
Salt to taste

For Tempering:-

Mustard seeds-1/2 tsp
Methi Seeds-1/4 tsp
Curry leaves-few


Method:-

Boiled eggs in water for 15 minutes.Peel them after cooling completely and make slits with a knife.


Heat oil in a pan and mustard seeds and let them splutter.Now add methi seeds,curry leaves and fry for few seconds till methi turns brown.

Add chopped onions and green chillies and fry till they turn light brown.Then add ginger-garlic paste fry for 4 minutes.

Now add chilli powder,turmeric powder,coriander powder,and cumin powder,mix well and saute for few seconds.

Add chopped tomatoes and fry for 4-5 minute.

Add tamarind pulp and 2 cups water and bring to a boil.Add salt and jaggery and reduce heat and let it simmer for 2-3 minutes.

Add the boiled eggs and let it cook in the gravy for 10-15 minutes or till you get the required gravy consistency.

Garnish with chopped coriander leaves.

Serve this hot rice .

Omelet And Bread Omelet

Ingredients:-


Eggs-4 nos
Onions-1/2 cup
Tomato-1/2 cup (optional)
Red Chilli powder-1 tsp
Turmeric powder-1/2 tsp
Ground Black Pepper-1/2 tsp
Green Chillies-2 nos (finely chopped)
Coriander leaves-2 tbsp
Salt to taste
Oil-2 tsp

For Bread Omelet :-

Bread slices-3 nos
Omelet mixture
oil


Method:-


Add the chopped onions,tomatoes,green chillies coriander leaves in a bowl.
Now add chilli powder,turmeric powder,black pepper powder and salt beat until well combined.

Now break  the eggs add to it .Mix it all up well.It'll look like ...

Heat the oil in a medium,nonstick frying pan,warm over medium-high heat until mildly shimmering but not smoking.Have a spatula at the ready.Pour some of this egg mixture on the pan,in small circular motions,distribute the mixture evenly around the pan and sprinkle some oil.Cook it on low flame for 3 minutes,until the base of the omelet is lightly browned.

For Bread Omelet Method:-

Heat the pan on medium heat.

Meanwhile toast bread slices using toaster.If you don't have toaster then you can toast the bread slices on pan only with using some butter.

Put some oil in the same pan.Once the oil is hot pour the egg mixture in a pan to prepare omelet.Let it cook for a minutes.

Now dip bread slices in the egg mixture and keep it aside.

Let it cook for another 2 minutes.Now put bread slices over the omelet.Put plane side of bread over omelet.

Now flip the omelet carefully by holding both the bread slices with tips of your finger.

Egg Kurma

This egg kurma is very yummy dish.This masala can be used for different vegetables and meat also.We can use this for potato with capsicum ,cauliflower,paneer,mutton,chicken and even to fish also.Any combinations of these tastes good.Hope all of my friends will also love this curry and will try this....

Ingredients:-


Eggs- 5 nos (boiled and peeled)
Onions-1 no large (finely chopped)
Green chillies-2 to 3 nos ( slit)
Red chilli powder-2 tsp
Turmeric powder-1/2 tsp
Curry leaves-few
Coriander leaves-few
Salt to taste
Oil-2 tbsp
Egg-1 no (break and whisk)


For Masala : Grind together

Cashew- 4 tbsp
Coconut grated-3 tbsp
Poppy Seeds / Khus Khus -3 tbsp
Cloves-3 nos
Cardamoms-3 nos
Cinnamon stick-2 nos small
Bay leaves-2 nos
Ginger-small pieces
Garlic-6 to 8 nos

Grind these in a mixer with little water to a fine paste.
