Madata Kaja

Hi bloggers today i am coming with a sweet recipe i.e madatha kaja.This is one of the famous sweet items from andhra.My mom is a terrific cook and she prepares everything from snacks , tiffin, biryani, fried rice, desserts and sweets.I learned this recipe from my mom after my marriage. I tried this once and it came very good.My husband loves this sweet very much.

This recipe i am using rice cooker cup.
Ingredients-:

Maida flour-1 cup
baking soda-1/2 tsp
rice flour-2 tbsp
Ghee-4 to 5  tbsp
Water-1/2 cup for dough (or little less)
Sugar-1 1/2 cups
Water-1/4cup (for syrup)
oil-3 cups for frying

Procedure:

1.Take a cup of all purpose flour.

2.mix it with ghee,baking soda and water and make a dough.


3.Cover it with plate and keep it a side for 15-20 min.
4.now make small balls out of the dough.
5.Make each ball like thin chepathi.
6.Now place 2 chepathis one on each other. In between those two put little ghee and rice flour and roll them.(like we roll a mat)
7.Cut the roll in to peices.
8.now press the roll again with appadala karra.

9.Pour oil in the pan and heat it.
10.Fry them untill they turn golden colour.
11.Prepare suger syrup ( for testing take a drop of the syrup and take it on one finger and touch with other and try to open the top finger. if you get a single string out of it then syrup is done).
12.put the fried kaja in to the syrup directly.
13.Let the kaja absorb the syrup for a while.Remove it from sugar syrup and keep aside.
14.Repeat the pocess for the remaining kajas.Once again soak the kajas in the sugar syrup so that they nicely absorbed sugar syrup.
15.Remove from the syrup and serve.

Chicken Fry

Hi bloggers, I found some time to write up another recipe this time it is spicy chicken fry.It is very nice to taste and simple to prepare. I have boneless chicken in the refrigerator so i am using it. Let us get into the making part of it.


Ingredients:
1. Chicken 0.5 lb
2. onion - 1 medium sized ( chop into small pieces)
3. green chillies - 3
4. ginger and garlic paste - 2 tbsp
5. chilli powder
6. turmeric
7. garam masala - 1/2 tbsp
8. salt to taste
9. coriander leaves
10. curry leaves
11. oil - 4 tbsp
12. Bay leaves - 1
13. cloves - 2
14. cardamom - 2
15. cinnamon - 2
How to make:

First clean the chicken with water and keep it aside.

Take a cooking vessel and pour oil and add Indian spices ( clove, bay leaf, cardamom, cinnamon) with green chillies.

Next add chopped onions and curry leaves



Fry for some time until it turns golden yellow. Now add ginger/garlic paste


After adding ginger garlic paste fry it until the raw smell goes away.

Now add chicken to the onions and add chilli powder,salt,turmeric and garam masala powder to it.



Mix all these and let it cook for 15mins under slow flame with lid closed.

0pen the lid and check if the chicken is cooked or not. If the chicken is cooked then add water based on how you want it to be. Add more water if u want it to be gravy.Today I prepared it as dry that's why i did not add water.






Cook this until the water goes.


Finally take this in to the serving bowl and garnish with the coriander.



Serve with hot rice or roti.

Tomato Dosa

Bloggers this is my first post.Today i am coming with tomato dosa.My mom used to make these yummy tomato dosas which are spicy and tasty.I like it plain but u can have with any type of chutney.Following is the recipe.

Ingredients:
Raw Rice-2 cups (need to be soaked for about 3 to 5 hours )(rice cooker cup i useing)
Tomatos-5 to 6 medium size, cut into big pieces
Red chillies-7 to 6 (acc to ur taste)
Onion-1/2 (for grinding to add it to dosa paste)
finely choped onions-1/2 cup
Turmeric Powder-1/2 tsp
jeera-2 tsp
Salt to taste
oil to spray
Procedure to make Dosa paste
1. Put soaked rice , tomatos, jeera , turmeric , salt and onion(1/2) into mixer and grind until it becomes paste.

2. Make sure the dosa paste is not too thin or too thick.

3. Keep the frying pan ready to make dosas.
4.Pour the paste in a swirling motion(like making regular dosas) on the hot pan.Spray oil on top it and some onions.
5.When one side is fried to a gloden color,flip over and fry the other side.


6.Finally serve hot with your preference of chutney.
