Ridgegourd/Beerakaaya- 2nos (peeled and chopped)
Eggs-4nos (make 4 slits along the sides)
Dried Prawns/Shrimp-20 nos
Red Onios-1 big (chopped)
Green Chillis-3 nos (slit length wise)
Red Chilli Powder-1/2 tsp (adjust as per taste)
Turmeric Powder-big pinch
Ginger/Garlic Paste-2 tsp
Salt to taste
Remove the head and tail from the dried prawns,if it has not been removed.Wash the dried prawns thoroughly and soak in water for half an hour.Drain the water.Boil the eggs and remove the shell and slit along the sides.
Heat oili in a pan,once it's warm add dried prawms for a 3 to 4 min, remove and keep aside.
In the same pan,add the oil.Add green chillis fry for 2 mins,now add onions and saute till transparent,then add ginger garlic paste fry for 2 minutes.
Now add chopped ridge gourd, turmeric powder,salt mix well and cook for 8 to 10 mins,on medium heat.Stirring once in a while.Yu will find it leaves water,let it cook in its water.
When ridge gourd almost half cooked now add fried dried prawns,chilli powder and eggs mix well.Reduce the flame and simmer for 5 minutes.
Now serve hot white rice.
