Beerakaya Tokku Podi (Ridge gourd Skin Fry)
Ingredients:-
Peeled Ridgegourd skin-2 cups
Garlic cloves-6 nos(cut into pieces)
Curryleaves-few
Red chillis-3 nos
Hing-1 pinch
Cumin seeds-1/2 tsp
Mustard seeds-1/2tsp
Salt to taste
Oil-2 tbsp
Method:-
Take the ridgegourd skin in a bowl and wash it with water.Transfer this to the mixi jar and blend it.It will bleand like the coarse powder.If u need u can add water.
Now heat the frying pan add oil to it.when oil is hot add cumin seeds,mustard seeds when it gets popup add red chillis,hing,curry leaves and garlic fry until it changes to light brown color.
Now add to the blended powder in it and add some water, salt to it mix well.Fry until the raw smell goes away.Add 2 tsp oil to it.
Now fry till its dry powder and little crispy.
Serve with hot rice and ghee.

nice way of using the ridge gourd skin, I too make chutney kinda similar to this! Yours looks very tempting and delicious.
