Mushroom Biryani
Ingredients:-
Basmathi Rice-2 cups
Mushroom-1 packet
Onion-2 nos
Green Chillis-3 nos
Cashews-1/4 cup
Tomatos-2 nos
Ginger/Garlic past-2 tbsp
Coriander Leaves-1/2 cup
Mint Leaves-1/4 cup
Garam Masala Powder-1/2 tsp
Red Chilli powder-2 tsp
Coriander Powder-1/2 tsp
Biriyani Masala powder-2 tsp
Salt to taste
Oil-4 tbsp
Food color
Whole Garam Masala:
Cloves-3 nos
Cinnamon Stick-2 nos
Cardamom-3 nos
Bay Leaves-3 nos
Shajeera-1/4 tsp
Star aniseed-1 nos
Method:-
Cut the onions into small pieces.Clan and chopped the mushroom.
Tomatoes ,microwave or boil them till very soft,cool them,peel the skin out and pure the tomatoes.
Cashews ,soak it in milk for 15 minutes,Grind them to a very fine paste.
Soak the rice for 1/2 an hour.
Heat oil in a pan add 2 tsp mint leaves,2 tsp coriander leaves,green chillies,fry for a min,now add rice fry for 4 minutes.
In a thick bottomed pan add oil,once oil is hot add all the whole garam masala ingredients and fry till light golden color.Add green chillis, mint leaves and coriander leaves fry for 2 minutes.
Now add onions fry until golden brown color.Add ginger garlic past fry for 3 minutes.
Now add tomato puree and cashew past,red chilli powder,coriander powder,garam masala powder,biryani masala powder, and salt, mix well and fry on medium hat for 5 to 8 minutes.
Add the chopped mushrooms and cover with lid and cook for about 10 min,until the gravy leaves oil and the mushrooms are cooked.
In a bake ware,spray the oil add cooked rice,later mushroom gravy to it,again cooked rice.
Now add some food color mix with water or milk to the rice.
Tightly cover the pan with aluminum foil,bake at 350F for about 20 minutes,Remove from the oven,Mix well and again keep it for 15 minutes.
Serve it with rita or any curry.

Umm what do you mean food color? Does this Biryani need one? Can Saffron be substituted?
