Chicken Dum Biryani
Hi friends today i coming with chicken dum biryani.Chicken Biryani is by far the most popular Indian rice recipe around the globe.
There are two ways of making a chicken biryani,one is calles Pakki biryani,in which we cook the meat separatly and then layer it with the rice,seal and cook in a very low heat.
The other method is Kachi biryani,in which you marinate the meat,place it at the bottom od the pot and cover it up with par boiled rice, seal and cook on a very low heat.
This recipe is the layered chicken biryani in which is chicken cooked separately.
To make this dish
Ingredients:
Chicken Marination-
Chicken-1 whole chicken cut into small pieces
Yogurt-1/4 cup
Ginger/garlic paste-2 tbsp
Turmeric powder-1/2 tsp
Salt to taste
Boilling the Rice:
Basmati Rice-5 cups
Bay leaves-3 nos
Cinnamon stick-3nos
Cloves-3 nos
Star anise-1no
Cardamoma-3 nos
Mint-1/2 bunch
Coriander leaves-1/2 bunch
Green chillis-3 nos(cut into two pieces)
Water-7 cups
Oil-3 tbsp
Salt to taste
Preparing the Chicken-
Bay leaves-1 nos
Cardamoms-2 nos
Cloves-2 nos
Cinnamon stick-2 nos
Mint leaves-1/2 bunch
Coriender leaves-1/2 bunch
Onions-3 nos medium finely sliced
Ginger/garlic paste-1 tbsp
Red chilli powder-1 tsp(acc to ur taste)
Coriander powder-1 tbs
Garam masala-1 tsp
Salt to taste
Oil-3 tbsp
Ghee-1 tbsp
Fried onions 1 cup ( Indian grocery stores we get )
Food colour-red,orange
Baking tray or Aluminum foil tray -1 medium size
Aluminum foil for rap
Method:-
Wash the chicken well.Make a marinade by mixing yogurt,ginger/garlic paste,turmeric powder,chilli powder and some salt.Mix in the chicken,cover and marinate for 8 hours.
Wash and drain the rice.Heat 2 tbsp oil in a pan and add green chillis,cloves,bay leaves,cinnamon,star anise,cardamoms,mint leaves,coriander leaves and fry for a few seconds.
Add the rice and fry it for 2 minutes till glossy and all the water has evaporated.Now add the rice mixer into rice cooker and add 7 cups of water and some salt to it.Mix all of it and cook it.
In the meantime,heat 2 tbsp oil and ghee in a pan and add cloves,bay leaves,cinnamon,cardamoms,green chillis,mint and coriander leaves fry for a few seconds.
Now add the onions and ginger/garlic paste and fry it until color turns gloden brown.Add red chilli powder,coriander powder,garam masala.Fry for 1 min.
Add the chicken with the mariande.Mix well and cook on medium heat till the chicken is almost done and the gravy is thickens.
Now open the rice cooker.
Take a big baking tray first spread some ghee at the bottom of the tray.
Second a layer of rice,followed by a chicken.Now sprinkle chopped coriander,mint and fried onions.
Repeat the layers with rice being the top most layer.Sprinkle the leftover onions and coriander and mint leaves.
Finally add the colours (mix each of the food color separetly with water)
Biryani ready to be baked.
Seal it tight with aluminum foil.
Pre heat the oven and bake biryani for about 15 mins at 400 degrees.After 15 mins take out the tray and mix from the centre.
After mixing again seal it tight and bake biryani for another 30 mins.
After 30 mins turn off the heat. Keep the tray for 5 mins inside oven and open.
Enjoy the delicious chicken biryani !!!!!!!!
Serve hot with a raita of your choice.

hi ramya keerti, u can layer in any stove pan layer the rice and chicken every thing and close with lid or aluminum foil cook it for 25 to 30 mints in low flame.with out baking u can do it.try this tell me if u need anything.sorry for delay reply.thank u.
