Mixed Vegetable Paratha / Mixed Veg Stuffed Paratha / Mixed Veg Stuffed Paneer Paratha

Ingredients:-

For Dough:

Whole wheat Flour-2 cups
Oil-1-2 tsp
Salt to taste
Water as needed

Take a mixing bowl,add flour and salt mix well.using water make it to smooth dough,then add oil and knead for a minute and cover it and keep aside for at least 30 minutes.


For mix Veg Paneer Stuffing:-


Potato-1 nos
Peas-1/4 cup (fresh or frozen)
Carrot-1 nos (shredded)
Cabbage-1/2 cup (finely shredded)
Paneer-1/2 cup (shredded)
Cauliflower-1/2 cup (shredded)
Onion-1 small (finely chopped)
Ginger-1 tsp (finely chopped)
Coriander leaves-2 tbsp (finely chopped)
Turmeric powder-1/4 tsp
Chilli powder-1 tsp
 Garam Masala powder-1/2 tsp
Cumin powder-1/2 tsp
Salt to taste
Cumin Seeds-1/4 tsp
Oil-2 tsp


Method:-

For Dough:-

Place the flour and salt in a large bowl and mix well.Add water knead till it becomes a soft,pliable and non sticky dough.Keep cover and let sit for at least 30 minutes.

For Stuffing:-

First boil potato and green peas till soft n cooked.Then peel skin from potato and mash it along with peas n keep aside.

Wash n peel the carrot n shred and grate the paneer also .Cabbage and cauliflower cut into cubs then put into chopper mixture ,keep it aside.

Heat oil in a pan,add cumin seeds when it splutter and ginger n onions and saute for a minute.

Then add mashed potato n peas,shredded carrots,cauliflower ,cabbage mix well and fry for 5 minutes.

Then add turmeric powder, chilli powder, cumin powder and garam masala and salt stir for 4 minutes.

Then add paneer stir fry for few seconds and coriander leaves mix well,turn off the stove.keep it for cool.

Once it cool down make into small balls.


Mixed Veg Paneer Paratha:-

 Now take the chapathi dough, divide the dough into make small medium size balls.
Take one dough ball,and roll it to 3" and keep 1 mixed veg filling and seal the edge together and roll it to a smooth ball and then gently roll it like regular chapathi (with less pressure)Do the same for the remaining dough n filling.

Heat a tawa,fry the parathas on both sides till turn golden brown,drizzle some oil on around the parathas (if u need oil ). After that remove form the tawa.

Serve hot with pickle or plain curd or yogurt.

Avocado Paratha / Avocado Chappati / Indian Flat Bread With Avocado

                            Paratha by itself is very healthy,if it is with the flavor of avocado isn't sound more healthy and delicious.We all know avocados provide nearly 20 essential nutrients,including fiber,potassium,Vitamin E,B and folic acid.It is colloquially known as the Alligator Pear,reflecting it shape and the leather - like appearance of it skin.

Ingredients:-

Whole Wheat Flour-2 cups
Ripe Avocado-2nos (medium)
Onion-1/2 of one medium (grated)
Green Chillies-2 -4 or to taste (finely chopped)
Garlic -6 no pods (grated)
Lemon Juice-1 1/2 tbsp
Coriander Leaves-few (finely chopped)
Salt to taste
Oil-1 tsp
Additional Flour -for dusting


Method:-


Cut a ripe avocado around the seed and twist,which will separate them into two halves.Using a spoon scoop out the flesh in a bowl and smash it like smooth paste.

Now add the lemon juice, grated onion,garlic,chopped green chillies,chopped coriander leaves,salt to taste and mix well until they are well incorporated.

Add flour in little at a time and incorporating to form a dough.

You may need a little less or more that the 2 cups of flour- add as needed.
Once the dough comes together,drizzle a few drops of oil over the dough ball to coat.Cover and allow the dough to rest for 20 minutes.

Heat up a tawa on medium heat and start dividing the dough and forming balls.
Take a dough ball and flatten between the palms of your hand.

Dip in additional dry flour and start rolling with a rolling pin using flour to dust.
Once the paratha is rolled out and the tawa is hot,place it on the tawa.

Allow it to cook change of color and little bubbles will appear.

Flip  and press gently with a spatula with rotating.
Flip once again and allow it to cook for just 30 seconds or a minute.

Take off the tawa and place in a hot case till ready to serve.
Serve hot with any curry's,yogurt and pickle & Enjoy!!!!

How to check Avocado Ripeness:

Gently press the avocado with your thumb.If it's unyielding,like a rock,then it's not ready yet.Your finger easily sinks into the side,then it's overripe.What you want to feel is a slight yield when you press.Stay away from avocados that are too soft as they may already have roots sprouting inside them.

Ingredients:-

Dough:-

 Wheat flour-1/4 cup for rolling


Filling:-

Potatoes-1 nos medium size(boiled,peeled and mashed)
Cumin powder-1/2 tsp
Coriander powder-1/2 tsp
Turmeric powder-1/4 tsp
Green Chillies-2 nos
Garam Masala powder-1/2 tsp
Amchoor powder-1/2 tsp
Red chilli powder-1/2 tsp
Coriander leaves-2 tbsp
Onion-1 no small  size (optional) (u can add the raw onions or u can for 3 minutes add to it)
Salt to taste


Method:-

Filling:-


Heat a pan add 1 tsp of oil and add chopped onion fry for 3 to 4 minutes.

Making Paratha:-


Divide the dough into small balls.

Roll the dough into 3 inch diameter circles.Place the potato balls in the center.Seal by pulling the edges of the rolled dough together to make a ball.Prepare with rest of the dough.

Dust the working surface with some flour and roll out the stuffed dough to form 6"-7"diameter circles.

Heat a tawa and once its hot,place a paratha and let it cook for 15 secs.Flip the paratha and let it cook for a few more secs.Once light brown spots appear,dizzle some oil or ghee and roast to a golden shade on both sides.Use a spatula to press the puffed areas as the paratha gets roasted.
