Ravva / Suji - 2 cups
Cardamom Powder-1 tsp (optional)
Cashew Nuts-1/2 cup (make into pieces)
Oil - For deep frying
Ingredients for the batter:-
Maida / All-purpose Flour-1/2 cup
Salt- 1/2 tsp
water -1/2 cup
Heat 4 cups of milk in kadai.Add sugar,salt ,ghee, and cashew mix well.
Let it come to a rolling boil.Reduce to low-heat and then slowly stir while adding he rava (make sure there are no lumps). Mix well and cook until it is thickened for 5 -6 minutes.Just before turning oof the heat,add cardamom powder stir well and allow to cool.
Now grease a plastic cover or you can grease your plams with ghee,take a spoonful of mixture,shape them into round balls and flatten them into a circle shape shown below pic.
Arrange all of them on a greased plate.
In a small bowl mix all purpose flour,sugar,salt and add enough water to make batter . The batter should have the consistency not thin or thick in medium so that it will leave a coating on the sojjappalu or cakes.
Heat oil in a pan on medium flame.
When its hot ,take the flatten cakes and dip into the batter and carefully drop into the hot oil.
Turn into both side and fry them till they turn golden brown on both side.
Remove from oil and drain them on a paper towel.
Now ready to serve the Sojjappalu .
