Home Made Sprouts Recipe / How To Make Sprouts

Ingredients:-

Green Whole Moong Dal - 1 cup
You can use any type of bean for sprouting in the same method


Method:-

Wash and soak the green whole moong dal in water for 10 hours or overnight.

Drain the water completely.

Spread this in a casserole (hot box / hot pack) and close it and keep it untouched for overnight.
You can also keep it in clean muslin cloth ,bring the corners of the muslin cloth to the center,tie a knot and keep aside undisturbed for at least  8 hrs or overnight.If you open you can see the sprouts coming.We usually like the medium sprout not too long ones.

But if you want more lengthy sprouts,then keep aside for another 3-4 hrs extra.But just open and check then leave it undisturbed don't toss or turn over.

You can either make salad with fresh sprouts or make a stir fry with it.You can also use chaats like pani puri,dahi puri etc.


Notes :-

You can even make mixed sprouts but soaking and getting sprouts for each bean will surely differ so keep that in mind.

You can make sprouts with mochai,dried green,yellow peas,channa, etc..

Savory Maida Biscuits / Savory Diamond Cuts

Ingredients:-

Maida / All Purpose Flour -1 cups
Red Chilli Powder-3/4 - 1 tsp (optional)( u can skip or u can add as u r taste)
Baking Soda-a pinch
Ajwain Seeds-1/2 tsp
Salt to taste
Butter / Ghee / oil-1.5 tbsp
Oil- to deep fry


Method:-

In a mixing bowl,add the maida,salt,chilli powder,ajwain seeds and mix well.

Now add the hot ghee mix it well with your ands so that the ghee is incorporated very well in the flour.
Now sprinkle water little by little and knead into a smooth,pliable yet firm dough.If the dough is loose,the biscuits will turn out soggy.

Cover the dough and rest it at least for 20 minutes.Resting helps in making the dough more pilable.

After the resting time,knead the dough again for a couple of minutes and divide them into 3 equal  sized balls.

Heat oil a kadai for deep frying.

Take one of the balls and Using a rolling pin,roll out each ball of dough into a flat disk (10" disk) it should be medium thick not too thin or too thick.


Take a knife or pizza cutter,cut the dough into thin horizontal strips.

Now cut them vertically to give you small diamond shapes.Slowly remove them from the surface & keep them in a plate or tray to fry.Repeat with the rest of the dough.

When the oil is hot enough,add all the diamond to the oil,turn heat to medium heat.
Fry well on both side until they turn light brown  & crisp.
Once done, remove from the oil using slotted spatula and drain the excess oil in paper towel.

Once it has cooled ,store in air tight container.Repeat the same with remaining dough.

Enjoy with a cup of coffee or tea!!!

Baklava

Ingredients:-


Phyllo Sheets-20
Butter-1 cup


For The Filling-


Cashew Nuts-1/3 cup
Pistachios-1/3 cup
Walnuts-1/3 cup
Powdered Sugar-1/2 cup
Cardamom Powder-1/4 tsp
Cinnamon powder-1/2 tsp
Salt-1/8 tsp


For the Sugar Syrup-


 Sugar-1 cup
Water-1/2 cup
Lemon juice-1 tsp
Rose Water / Rose Essence-1/2 tsp


Method:-



For the Sugar Syrup:-


Take sugar,water and lemon juice in a pan.

Heat it and bring it to a boil while mixing it for the sugar to dissolve.Once the sugar has dissolved,let it simmer on low heat for about 4 minutes,without stirring,add rose water or rose essence .Remove it and let it cool completely.

  For The Filling:-



Place all the nuts in a baking tray and spread them evenly.

Roast in the preheated  150 C oven or toaster oven for 10 minutes or light golden color.

Allow to cool completely.

Now powder the nuts.

Add the powdered sugar,salt cinnamon powder and cardamom powder and grounded nuts mix well .keep it aside.

Heat butter in a pan till brown in color.Keep it aside.

Assemble the Baklava:-



Pre heat oven to 150C .

Thaw the frozen phyllo pastry according to the the directions given on the pack.Mine said to thaw it at room temperature for 1 hour.

I have used a 8.5 x 4.75 pan.I used 10 sheets of pastry.I cut in the middle of the each sheet fit the baking pan and immediately refrigerate the remaining sheets.All sheets cover with wet cloth.

Now grease the pan with melted butter,

Place a phyllo sheet,It's perfectly okay if its a bit wrinkled or torn.

Apply butter on the sheet generously.

Place another sheet.Continue the process till 5 sheets are used up.

Put 1/3 cup of the filling on the top of the 5th sheet.

Spread the filling evenly. Place another sheet and butter it.

Continue till another 5 sheets are used up.
Continue this process in such a way that you will have 4 layers of 5 sheets alternated with with 3 layers of filling.

The finishing will be with the set of 5 sheets.

Cut into desired shape.

Drizzle the remaining butter on top.
Place the dish in the preheated oven and bake for 1 hour and 15 minutes or till you get a golden brown top.

Remove it from the oven and evenly drizzle the sugar and honey syrup immediately.

Allow to cool completely before serving.Serving it garnished with nuts..Enjoy!!!
