Basmati Rice-3 cups(wash and soak for 30 minutes)
Soya Chunks-1 cup
Peas-1/2 cup (optional)
Vegetables- 1 cup Cut into small pieces (potato,carrots,beans)
Paneer -1 cup (cut into pieces and lightly roasted in ghee till brown)
Cinnamon Sticks-3 nos
Bay leaves-5 nos
Green Chilies-7 nos
Onions-2 nos (Finely Chopped)
Ginger-Gallic Paste- 2 tbsp
Salt to taste
Heat ghee in a pressure cooker . Add cloves,cardamom,cinnamon,bay leaves fry for a min till fragrant.
Now add the slit green chillies and chopped onions.Fry till onions are soft and become
translucent.Add ginger-garlic paste and saute for a couple of minutes.
Add potatoes fry for few minutes.(peas,carrots,beans if u want u can add this time)
In a separate pan fry the vegetables till its half cooked and keep it aside.Paneer fry till its light brown color and keep it aside.
Now add the soya chunks (if u want u can boil in water). Add rice fry for 5 minutes.
Add required water,salt mix together .Cover with lid and turn the heat to medium.when rice is almost 1/4 done then add the fried vegetables, paneer cubes mix together.Cover with lid for 10 minutes.
Serve with raita or any type of curries.
