Sweet Poori / Padhir Pheni / Pathir Patheni / Chiroti / Surul Poori
Hi friends today i am coming with sweet poori recipe.It is very tasty, crispy and easy to make.The sweet poori can be prepared in two ways. One way is dusting sugar on the poori and the other one is dipping in sugar syrup. If you like it less sweet then you may want to sprinkle the sugar instead of dipping in the syrup. The one with sugar sprinkle stays longer than the other one.
Ingredients:-
For Dough:
All Purpose Flour-2 cups
Rice Flour-1 cup
Sesame Seeds-3 tbsp
Ghee-2 tbsp
Salt-1/4 tsp
Required water
For On top or Sprinkle :
Sugar -1/2 cup
For Paste:
Rice Flour-1 tbsp
Ghee-1 1/2 tbsp
Sugar Syrup:
Sugar - 1 cup
Water-1/2 cup
Oil for deep frying
Method:-
Preparing the Dough:
Mix the maida , rice flour,sesame seeds , salt and ghee .Sprinkle required water and knead into dough.
Knead well and make a soft dough.Cover and keep aside for 10 minutes.
Making the rice paste:
Mix rice flour and ghee and make a paste.
Making the poori :
After 10 minutes divide dough in to small portions and make balls out of the dough.
Roll the dough balls in to chapatis.Make 5 nos of chapatis.
Shaping the sweet poori:
Apply the paste on top of a chapati.
Place the next chapati on top of the paste applied chapati.
Similarly apply paste and stack all the five chapatis.
Roll the stacked chapatis firmly like a pipe.
Cut them into equal sizes.
Keep the cut surface facing bottom.
Gently roll them like pooris.
Preparing the Sugar Syrup:
Put 1 cup of sugar in a thick bottom vessel.
Pour water to the sugar.mix well and heat in a burner till it becomes 1 string consistency.
Frying the Poori:
Heat oil in pan.
Keep the flame between medium and low.Deep fry the sweet poori and fry until it golden color.
Drain excess oil on a kitchen tissue.
Finising the sweet poori:
Immediately sprinkle the poori with sugar .
Dip the fried poori while it is warm in the sugar syrup.
Leave it inside the syrup for 1/2 minute.
Remove and store in air tight container box .

I have made a similar one which is called Kaja. The steps are almost similar though the recipe is slightly different. I liked using rice flour in the dough too. Lovely pictures.
