Madata Kaja

Hi bloggers today i am coming with a sweet recipe i.e madatha kaja.This is one of the famous sweet items from andhra.My mom is a terrific cook and she prepares everything from snacks , tiffin, biryani, fried rice, desserts and sweets.I learned this recipe from my mom after my marriage. I tried this once and it came very good.My husband loves this sweet very much.

This recipe i am using rice cooker cup.
Ingredients-:

Maida flour-1 cup
baking soda-1/2 tsp
rice flour-2 tbsp
Ghee-4 to 5  tbsp
Water-1/2 cup for dough (or little less)
Sugar-1 1/2 cups
Water-1/4cup (for syrup)
oil-3 cups for frying

Procedure:

1.Take a cup of all purpose flour.

2.mix it with ghee,baking soda and water and make a dough.


3.Cover it with plate and keep it a side for 15-20 min.
4.now make small balls out of the dough.
5.Make each ball like thin chepathi.
6.Now place 2 chepathis one on each other. In between those two put little ghee and rice flour and roll them.(like we roll a mat)
7.Cut the roll in to peices.
8.now press the roll again with appadala karra.

9.Pour oil in the pan and heat it.
10.Fry them untill they turn golden colour.
11.Prepare suger syrup ( for testing take a drop of the syrup and take it on one finger and touch with other and try to open the top finger. if you get a single string out of it then syrup is done).
12.put the fried kaja in to the syrup directly.
13.Let the kaja absorb the syrup for a while.Remove it from sugar syrup and keep aside.
14.Repeat the pocess for the remaining kajas.Once again soak the kajas in the sugar syrup so that they nicely absorbed sugar syrup.
15.Remove from the syrup and serve.

i tried ur recipe. very nice.
but for first time it came out very well.
every one asked me more. so made 2nd time, it came out bad, only thing, i skiped rice flour part. is it will make that much difference. plz help (reply)
