Kakarkaya Pachadi / Bitter Gourd Chutney

                        
                        Kakarakaya / Bitter gourd chutney is very simple and tasty.This is my all time favorite dish from my mom's kitchen.For those who don't like bitter taste of karela,this recipe takes out the bitterness and gives a sweet and spicy taste.

                            Bitter Gourd sauteed in oil to dark brown and seasoned with red chillie powder,jaggery and tamarind.

For this recipe:-


Ingredients:-


Bitter Gourd / Kakarkaya -4 nos
Onions-2 nos
Turmeric powder-1/2 tsp
Curry leaves-few
Hing-1/2 tsp
Jaggery-3 tbsp (acc to ur taste)
Tamarind pulp - 3 to 4 tsp
Red chillie powder-2 tsp
Salt to taste
Oil-4 to 5 tbsp


Method:-

Take the kakarkaya wash,clean,remove the seeds and cut into small pieces.
Take the onion peeled and finely chopped .
Heat the pan  and add oil to it.Add bitter gourd pieces fry on a medium flame until they turn brown in color.Transfer them into a plate.






Again heat the pan and add oil to it.Now add chopped onions fry on medium flame until they light brown color.





After the add the biter gourd pieces mix well,add turmeric powder,curry leaves,hing, red chillies powder,jaggery,tamarind pulp ,salt mix well.Add little water and cook covered on slow flame for 5 minutes.








After 5 minutes remove the lid and cook till its little dry.





Transfer the chutney to a serving bowl.


Serve hot with plain rice.
