Paneer Masala Gravy(Jinnu Besaru)



Hi Friends,

This dish is from my mom's recipe.This paneer gravy tastes great with rice.This recipe easy and simple to make.It's a spicy,rich and flavorsome tasty recipe with wonderful color.This dish fresh tomatoes,dry mangoes,onion masala and best part is Paneer.Its easily digestible and rich source of calisium and iron.This curry we will cook paneer water (whey).Try this recipe today....Hear i am showing homemade paneer also..




Ingredients:-

For Paneer:-

Milk-4 cups
Curd/Yogurt-1 1/2 cup
or
Vinegar
or
Lemon Juice

Strainer
Big bowl

For Paneer Masala Gravy:-

Paneer-5 pieces
Onion-1 no (big)
Tomatoes-2nos
Cumin seeds-1 tsp
Dry red chillis-5 to 6
Garlic cloves-3nos
Dried mangoes-4 nos
Mustard seeds-1 tsp
curry leaves-few
Turmeric powder-1 pinch
Rice flour-2 tsp
Milk-3 tbsp
Salt to taste
Oil-2 tbsp
Paneer greenish liquid(the whey)-4 to 5 cups


Process:-

Heat the milk in a heavy bottomed pan on medium heat.Keep strring so that the mlk doesnt stick to the bottom of the pan.Just when the milk starts steaming and just it comes to a boil,add the yogurt to it and gently stir.
The foaming milk will break into curdle floating in an almost clear greenish liquid(the whey).
At this point remove the pan from the heat and now strain this on a strainer over a bowl.
For this curry we need the whey (the liquid part) for use.(do not throw the whey)
Wait for sometime till the water drains out completely and then take out the strainer.
Now chop into small pieces.

Paneer Masala Gravy:-

For this recipe we need to prepare the paste.First cut the onions into chunks add this into the mixie jar and add cumin seeds,red chillis grind to fine paste.
Separatly Boil the dry mangoes and tomatoes cut into pieces in a 1/2 cup water.till it soft.
Now heat the pan and add oil when oil is hot add mustard seeds,cumin seeds,red chillis and curry leaves fry it and add some chopped onions.Fry the onions until it changes the colour.
Now add boiled dry mangoes,tomatoes and turmeric powder mix it well.Now add onion masala paste and paneer water (whey) pour mix it well.Bring to boil.
Now take the rice flour mix with milk until smooth.

Slowly pour in the rice flour mixture while stirring the gravy until thickened.And add salt to it boil for 5 minutes.
Just before taking of the stove add the paneer pieces mix it once.

Serve with hot rice.


Note-Don't boil after adding the paneer. It become hard.

  6. super! I too make the paneer fresh at home. And I do have a recipe of homemade paneer. But its been a while I made paneer at home. Looking at yours, am gonna try this curry too
