Ingredients:-
Ridge gourd Skin -2 nos (wash,and peel the skin )
Red chillies-4 to 5 nos
Cumin Seeds-1/2 tsp
Coriander Seeds-1/2 tsp
Sesame Seeds-3 to 4 tbsp
Tamarind -very small lemon size
Turmeric powder-1/2 tsp
Jaggery -small pieces
OIl-2 tsp
Salt to taste
For Seasoning:-
Mustard seeds-1/2 tsp
Red chillie-1 no
Asafoetida / Hing-1 pinch
Curry leaves-few
Oil-1/2 tsp
Method:-
Peel the skin of ridge gourd and ridge gourd small pieces cut into small pieces.
Heat a 2 tbsp of oil in a cooking vessel,add cumin seeds,coriander seeds and red chillies and stir fry for a few seconds,add sesame seeds fry for till its light golden color.
Now add the tamarind and ridge gourd skin ,salt turmeric powder and jaggery mix well and cook for 10 minutes on low flame and let it cool.
Once cool,grind the mixture into paste.
Heat half a tsp of oil in a pan,add mustard seeds and let them pop,add red chillies,curry leaves,asfoetida and stir fry for a few seconds.
Pour the seasoning over the ground pachadi .
Serve with hot rice.
this looks wow - my mom used to make this often; i am tempted to make now !
