Ingredients:-
Rice - 2 cups
Coriander Leaves-1 bunch
Bay Leaves-4 nos
Cardamoms-4 nos
Cinnamon Sticks-4 nos
Cloves- 4 nos
Peanuts -3/4 cup (u can add more or less)
Green Chillies- 5 nos
Salt to taste
Oil- 4 to 5 tbsp
Water-4 cups
Method:-
First wash and finely chopped the coriander leaves. Keep it aside.Cut the green chillies.
Heat oil in a pressure cooker.Add bay leaves,cloves,cinnamon,cardamom,green chillies fry for a few seconds.
Now wash the rice add to the cooker and fry for 5 minutes.
Now add the water and salt to it mix well.Close the lid and pressure cook for 3 whistles.
Now another pan add oil fry the peanuts till it golden color.Keep it aside.
Now in the same pan add the chopped coriander leaves stir fry for 3 to 4 minutes( till the water is evaporated). Keep it aside.
When rice done remove the lid Take out the green chillies and all the spices.
Now add the roasted and fried coriander leaves to the rice mix everything well.
Cover the lid for 15 to 20 minutes cook it in simmer.(Do not put whistle).
After 20 minutes open the lid mix everything well .Switch of the flame.
Serve hot with raita or any gravy.
The rice looks so welcoming and loaded with the flavors of coriander..too good to resist!!

i wud make a paste of coriander/mint/garlic ginger and fry till oil comes out and add water and cook rice in it,but urs is healther as coriander wud not lose its value by overcooking though :)
