Indian Style Baked Fish

Ingredients:-

Whole Tilapia fish  with skin ,head and tail on -1 (medium size)
Aluminum Foil
Baking tray
Tomato -3 slices(optional)
Onions-23 slices (optional)


For Marinade:

Dill leaves-3 tsp
Coriander leaves-4 tbsp
Chilli powder-2 tbsp
Ginger garlic paste-3 tbsp
Turmeric powder-1/2 tsp
Lemon Juice-3 tbsp
Pepper Powder-1 tsp
Salt to taste
Oil-2 tbsp

For Masala or Sauce:-

Onions (shallots)-4 nos (finely chopped)
Ginger-garlic paste-1 tbsp
Red chilli powder-1 tsp
Garam masal powder-1/2 tsp
Coriander powder-1/2 tsp
Turmeric powder-1/2 tsp
Tomato-1 no (finely chopped)
Oil-2 tbsp
Salt to taste
Curry leaves -few


Method:-



First clean and wash  the whole fish ,make slits on the fish,so that fish will be marinated well.

In a bowl mix together marinated ingredients and mix well.Then apply on fish coated the masala well.Keep it for 2 hours or overnight.

Now take a pan add 2 tsp of oil,when it gets heated up,add onions and curry leaves fry till its light brown color.Then add ginger/garlic paste stir for 4 minutes now add tomato pieces,salt,turmeric powder,chilli powder,garam masal and coriander powder and all 1/2 cup water  mix well .Cover the lid cook tomato is soft .

Open the lid ,you need a thick consistency for the sauce so if there is a lot of water cook it down and reducing the heat ,Saute until it is absorbed and the gravy is thicken.

Line a piece of aluminum foil on a baking tray and spread 1/4 the of the gravy on it.

Now place one whole fish on top and cover it with some more gravy ,now arrange the slices of tomato on the fish,onions pieces .

Now slowly seal the foil on all sides.

Bake in 350 F oven for 35 to 40 minutes.

When its done ...open the foil and place on a plate.

Note:-If u want u can do first in a non stick skillet add 2 tsp of oil and fry the fish on both sides turning carefully to keep the fish in tact.
