Ingredients:-
Arbi / Chamagadda - 5 nos
Urad dal-3 to 4 tbsp
Curry leaves-few
Turmeric powder-1/2 tsp
Red chili powder-2 tsp
Hing-1/2 tsp
Oil-3 tbsp
Salt to taste
Method:-
Wash the arbi well to remove any mud sticking to it.
Place the arbi in pressure cooker and add enough water to immerse all the pieces.Cook it for 2 to 3 whistles .Once the cooker cools to room temperature,drain out the excess water from the arbi and keep the pieces aside.
Let them peel out the outer layer and cut them in to small pieces.
Heat the oil in a pan.
When oil is hot add urad dal ,hing and curry leaves allow to cook on medium flame.When its chinge the color.
Now add the arbi pieces,turmeric powder,salt fry for 5 minutes.Fry gently that they don't get mashed and cooked on low flame.
After every f minutes turn it to the other side so that it gets cooked evenly.
Add red chilli powder,salt mix well.Stir fry until they turn golden brown color.
Serve hot with rice.

This looks so delicious! Normally I eat taro as dessert, this is really something different :).
ReplyDeleteOne of my favorite ways to cook Arbi too. I wouldn't have used so much urad, though, but love the idea because it would add so much more crunch to the dish. Delicious.
