Indo Chinese Veg And Egg Noodles


Ingredients:-

Chinese Noodles-1 pack
Ginger / Garlic paste-1 tbsp
Onion-1 no finely (chopped length wise )
Green Chillies-3 to 4 nos (slit length wise)
Vegetables- 1 cup finely /length wise chopped (Carrots,Beans,capsicum,Cabbage)
Onion-1 nos (Chopped length wise)
Spring onion-1 nos (finely chopped)
Tomato Ketchup-1 to 2 tbsp
Soya Sauce-1 to 2 tbsp
Veniger -1 tsp
Chilli sauce-1 tsp
Pepper Powder-1 tsp
Salt to taste
Oil-4 to 5 tbsp
Egg-2 nos (optional)

Method:-

To Cook Noodles:-

Boil water with 1 tbsp of oil,and 1 tsp of salt,When water is boiling drop the noodles in boilling water and cook it as per instructions in pack.Usually between 4 to 9 min.
Drain the water and run some cold water through the noodles so that they don't stick.
In a wide pan,heat oil,add chillis ginger/garlic paste and fry of 30 sec.
Add onions and fry for about 2 min,and vegetables and salt,keep it till they are 3/4 cooked.
Now add spring onion and give a good stir.
Immediately add noddles,ketchup and veniger,soya sauce,chilli sauce, black pepper powder and salt mix well till the noodles get the heat and ensure you keep mixing it.
Egg Noodles:-

Move the veggies into one side of the pan and in the empty side pour 2 eggs and scramble it.
Add a little salt and pepper powder  (just for egg)and once the egg is done ,mix the veggies and then noddles and all sauces..mix well.
Now Veg and Egg Noodles is ready.Serve with Tomato and Chillies Sauce..
