Here you will fine my post on making the basic chappatis dough:Preparing wheat flour dough for rotis.
Filling:-
Heat a pan add 1 tsp of oil and add chopped onion fry for 3 to 4 minutes.
Firstly boil the potatoes and peel and smash them.
Now add the onions, green chillies, coriander leaves, cumin powder, coriander powder, garam masala ,amchur powder, red chilli power, salt, turmeric powder and mix well.
Divide the mixture into small balls and keep it aside.
Making Paratha:-
Divide the dough into small balls.
Roll the dough into 3 inch diameter circles.Place the potato balls in the center.Seal by pulling the edges of the rolled dough together to make a ball.Prepare with rest of the dough.
Dust the working surface with some flour and roll out the stuffed dough to form 6"-7"diameter circles.
Heat a tawa and once its hot, place a paratha and let it cook for 15 secs.Flip the paratha and let it cook for a few more secs.Once light brown spots appear, dizzle some oil or ghee and roast to a golden shade on both sides.Use a spatula to press the puffed areas as the paratha gets roasted.
Serve hot with any curry of your choice or yogurt or raita.
