Ingredients:-
Dondakayalu / Ivy Gourds-2 cups
Oil for deep frying
For Batter:-
Corn Flour-2 tbsp
Maida / All purpose flour-1 tbsp
Ginger/Garlic paste-1 tsp
Red chilli powder-1/2 tsp
Salt to taste
Ajinomoto-1/4 tsp
For Seasoning:-
Oil-1 tsp
Cumin Seeds-1/2 tsp
Green chillies-3 nos slit into two
Curry leaves-few
Method:-
Wash the ivy gourds ,nip the tip and tail ends.Slice them into thin circles as shown in the image above.
Heat oil for deep frying in a heavy bottomed vessel.As the oil is heating,
Meanwhile mix the batter ,In a big bowl add corn flour,maida,salt,garlic-ginger paste,ajinomoto, chillies powder , salt and ivy gourds mix well.Sprinkle some water mix that ivy gourd well coated.
Once the oil is hot,reduce to medium high flame,slowly drop the batter coated ivy gourd into the hot oil and deep fry to a golden color.
Remove onto absorbent paper.
Heat a pan,add a tsp of oil,add cumin seeds and let hem splutter.add green chillies and curry leaves fry for few seconds now add the fried ivy gourds pieces mix for 2 mins.Now switch of the flame.
Serve hot a snack or a fry with rice and rasam.
