Vegtables Pulusu / Mixed Vegetable Stew


  Hi Friends,

           Today i am coming with mixed vegetable stew.This dis is very simple and easy to make.Filled with nutritive vegetables,this can me made in less than 20 minutes and without oil.This recipe from my mom.This dish we can  have with plain dal and papad.

Ingredients:-
Dry Mangoes-5 to 6 nos
Brinjal-2 nos (cut long pieces)(u can add more)
Okra-10 nos( cut into half)
Bottle gourd- 1 nos (cut into cubs)
Green Papaya-1/2 ( cut into cubs)(optional)
Small onions /Shallots -7 nos (peel the skin)
Corn-4 nos ( cut into small pieces)
Turmeric Powder-1/2 tsp
Peanuts-1/2 cup
Rice Rava- 1/2 cup(u want more thick the gravy u can add more rava)


Seasoning :-
Mustard seeds-1 tbsp
Red chillies-4 nos (make into pieces)
Garlic-2 pods(cut into pieces)
Hing-1/2 tsp
Curry leaves-few
Oil-2 tsp


Method:-

Clean and chop all the vegetables into big chunks.

 Soak the peanuts in water for 1/2 hour.
 Boiled the dry mangoes in 1 cup of water  and till its soft.
Heat the pressure cooker.Add soaked peanuts,rice rava,bottle gourd,brinjals,onions, salt mix well and cook for 10 minutes.
After add okra,boiled dry mangoes,mix well. Close the lid pressure cooker for till the high  pressure will come now put the whistle keep it for 3  minutes.After that off the flame.
When pressure goes away open the lid and again heat the cooker add corn pieces cook for 5 minutes.


Now heat the another pan add oil ,when oil is hot add mustard seeds,red chillies,garlic pieces,hing and curry leaves.fry till it changes the color.
Now add the seasoning into the stew boil for 5 minutes.Switch of the flame.
Now serve with rice,dal and vegetable stew.
