Rice Noddles Mango Pulihora


Ingredients:-
Raw Mango-1 nos
Rice Noddles-1/2 packet
Turmeric Powder-1 tsp
Peanuts and Cashews-handful
Cumin Seed-1 tsp
Mustard Seeds-2 tsp
Urad Dal-2 tsp
Chana Dal-2 tsp
Green Chillis-5 nos (sliced length wise)
Red Chillis-2 nos
Hing / Asafoetida powder -2 tsp
Curry laves-few
Salt to taste


Method:-

Peel  the skin  and grate the unripe mango. .If mango is not sour enough,add lemon juice.
 Boil water in a pan and  add turmeric powder and salt to it.Allow it to boil.
Add the rice noodles.Cook uncovered for 5 to 10 minutes until done but firm.
Drain in a colander and run it through cold water to arrest further cooking.
Heat oil ,add mustard,cumin seeds,urad dal,channa dal, peanuts,cashews,hing and curry leaves,fry till golden brown.
Add red chillis and green chillis.fry for a minutes.Now add grated mango and salt to it mix well,fry for 3 to 5 minutes.
Now add cooked rice noodles and mix well.Cook for 5 minutes.
If you want you add more lemon juice after adding the noodles.Saute for 5 minutes.

Serve hot.
