Pineapple Pastry

  
                                           Happy Father's Day 

  I would like to wish my wonderful daddy and my husband a fantastic father's day..!!!!!!!!



Ingredients:-
For the Cake:-
Eggs-6 nos
All Purpose flour / Maida-1 cup
Powder Sugar-1 cup
Baking powder-1/2 tsp
Melted Butter-2 tbsp
Pineapple Extract / Vanilla Essence-1 tsp
Salt to taste
Baking sheet
Non Stick Spray

For the Filling and Frosting:-
Heavy Whipping Cream-1 1/2 cup
Confectioner's Sugar-1/2 cup
Pineapple Chunks-1 cup
Cherries-10 nos

For the Syrup:-
Water-1 cup
Pineapple Extract-1 tbsp

Method:-



Preheat the oven to 375'F for 15 mins.Prepare the baking pans.
Grease the insides of the pan evenly with butter using a pastry brush.Sprinkle each of the pans with 1 tsp of all purpose flour.Tap gently on the kitchen counter to ensure the flour spreads and covers the pan.Remove the excess flour.Set pans aside till ready to use.

Separate the white from the yolks.Beat each separately the whits should form stiff peaks.
  Meanwhile also whisk the yolks also separately take the flour and add the baking powder,melted butter, salt to it and mix together.
Now take the yolk mixture and fold it in the egg white slowly and the slowly fold the flour mixture and mix just once or twice.

Fold: Means to slowly turn dry ingredients into the wet in a circular inward to outward motion.Do not bat or mix vigorously.The main purpose of folding is to allow more air into the mixture and to avoid flattening the frothy eggs.
Pour mixture into prepared pans.Bake it in the oven for 22 to 25 mins at 375'F until cake is done check by putting a toothpick or knife  the cake it comes out clean when inserted in the center of the cake.
Let cool in pan for 10 minutes and then invert cakes onto cooling rack.Let cool completely before frosting.
Chill the beater blades and the bowl in which you will use to whip the cram.Whip cream while slowly adding sugar till cream is thick and stiff.Do not over beat,it turns to butter.
Mix Pineapple extract and water in a bowl.Spoon the water all over the cake in a till cake is moist (but not soggy ).Spread an even layer of the cream,and place pineapple chunks and sliced cherries.
Place the other cake on the top of this and repeat the moistening procedure.
Spread an even thick layer of cream on top.To finish with remaining pineapple chunks and cherries.
This pastry is light and before you know you will be reaching out for another.
