Mysore Pak

HAPPY DIWALI TO ALL MY FRIENDS

Ingredients:-

Bengal gram flour/Besan-2 cups
Sugar-2 cups
Ghee-2 cups
Oil-1 cup
Water-1 cup

Method-

Mix besan with 5 tsp hot oil or ghee and rub well to remove lumps.Sieve this mixture and set aside. This process helps to avoid lumps while mixing with sugar syrup.

Heat the ghee and oil in  pan.

In a heavy bottomed pan mix sugar and water to it.Bring them to boil till the sugar syrup reaches one string consistency. One string means when you strecth the syrup between the thumb and index finger it forms a thin string.Alternatively you can put a drop of the syrup in a small cup of water. If the syrup doe'nt dissolve in water, reaches to th bottom and forms a ball it means the syrup is ready.

Now reduce the flame to low add the besan slowly to the sugar syrup and stirring continuously so that no lumps are formed.

When the beasan is well mixed with the sugar syrup and no lumps are seen, using a slotted spoon start pouring in the heated oil and ghee miture with your left hand while strring the besan and sugar syrup mixture with your right hand. When u pour ghee in the besan mixture a sizzling noise, showing holes in the mixture and absorbs all the ghee.By the time you are finished adding all the ghee the besan starts leaving sides of the vessel and showing a frothy mixute with lots of holes.

At this pont immediately remove the mixture and pour it in the tray.

The mixture sets within a mintes. With a knife cut into diamond or squares shapes.

Divya, both hubby and I simply love this sweet. My mom makes them really well, but she always does it by guess. So, I am really glad that I found this recipe :)
